Pinot Noir is not a single grape but it’s a vast family of clones. Fermentation without skin contact allows us to obtain white musts from black grapes which normally are the base for sparkling wines. Pinot Noir grape in Italy has the largest extension of planted area in Oltrepò Pavese which boasts for a national leadership in terms of wine quality.
